The BEST Creamy Shrimp and Grits
Ingredients for Grits
-4 Cups of Chicken Broth
-1/2 Cup of Heavy Whipping Cream
-1 Cup of Grits
-1/2 Cup of Smoked Gouda Cheese
– Dash of Salt and Freshly Ground Pepper
-1 Tbsp Butter
Ingredients for Shrimp
-2 Pounds of Large Uncooked Shrimp- Peeled and Deveined
-1/2 of Medium Sweet Vidalia Onion
-2 Cloves of Garlic Minced
-1/4 Cup of Dry White Wine of your Choice
-Dash of Salt and Freshly Ground Pepper
-1/2 Stick of Unsalted Butter
For the Grits: In a heavy-bottomed saucepan, bring the chicken broth, and whipping cream up to a low simmer. While simmering whisk in the grits and a pinch of salt. Stir constantly and return to a low simmer. Cook until thickened, stirring often, about 5 minutes. Stir in the butter and Gouda cheese. Season, to taste, with salt and pepper.
For the Shrimp: Heat a large saute pan over medium-heat. Melt butter and saute onion and garlic. Saute until onion is tender and translucent, and add the shrimp and saute for about 2 minutes. Add white wine and bring to a boil, about 5 minutes. Season with salt and pepper.
Serve over Creamy Grits and garnish with finely chopped chives and shredded parmesan cheese.
